2 teaspoons minced garlic
2 teaspoons finely chopped recent sage
Grated zest of 1 lemon
1 teaspoon coarse salt
1 teaspoon black pepper
2 bone-in, skin-on hen breasts (eight to 12 ounces every)

Directions

  • Preheat the oven to 425°F. Mix the olive oil, rosemary, garlic, sage, lemon zest, salt, and half of teaspoon of the black pepper in a small bowl. Rub the seasoning over the hen and beneath the pores and skin along with your fingers.
  • Place the hen, pores and skin facet up, on one facet of a giant rimmed baking pan. Roast the hen for 10 minutes.
  • In the meantime, wrap every cabbage wedge with one slice of bacon. Place the cabbage wedges on the opposite facet of the baking pan. Sprinkle with the remaining half of teaspoon black pepper.
  • Roast till the interior temperature of the hen is 170°F and the cabbage is tender, about 15 minutes extra. Drizzle the hen and cabbage with the lemon juice and serve.
